green papaya salad

I wanted to get this recipe down before I crashed. i finally decided what to make for the potluck tomorrow: Green Papaya Salad
1/2 large green papaya (note: this is not the usual papaya you buy in the store. Go to an asian market and ask.)
1 green (unripe) mango
3 cloves garlic
1 green serrano or thai pepper
1/4 cup fresh cilantro
1 Tbsp fucus tips or other sea vegetables
2 tsp lime juice
1 Tbsp palm sugar or brown sugar
Salt to taste
Shred the papaya, mango, garlic, pepper, cilantro and sea vegetable in food processor ( I used to do this manually, then pound it in a mortar and pestle. The food processor makes the pounding unnecessary). Add lime juice, brown sugar and salt to taste.
You can adjust the pepper to your liking -- this is pretty hot. Some leave it out altogether. The first time I tried making it there was a taste missing -- the fishy flavor. The sea vegetables make up for that nicely.! This version is vegan. I warn you, what you may get in Thai restaurants may have at the least fish sauce ( fermented anchovy) and at the worst shrimp paste as well.
