I got up at 0700, but didn't get around to making breakfast until now. Just messing about. I finally got around to watching Eddie Izzard -- loaned to me by
altrus and Eddie is hysterical. That is another reason breakfast was delayed. Hard to cook and giggle at the same time.
I steamed some butternut squash with some apples and added pecans and cinnamon. Okay -- I confess I did add some butter so it wasn't vegan -- you could do a dash of salt to round out the flavor. Any time there is sweet, salt brings it out a bit better.
I'm slated to take the day before Thanksgiving off. I'm going to cook and cook and cook for my dad. He has requested Parkerhouse rolls. I had mom glean the recipe from her 40's Betty Crocker cookbook. Did you know that Betty Crocker was an invention of Oregon State University? This is a great recipe wherein you use compressed yeast and scald the milk, etc. It comes out flaky and yeasty. He has also requested sweet potato pie. We have already gotten the free-range turkey... Now I have to think of what veggie dish I want to eat. I know I'll make Waldorf salad...
Here's the Waldorf Salad story. Waldorf Salad is a famous dish from the Waldorf Hotel in New York. It is traditionally made with apples, walnuts, celery, dates and mayonnaise. Add a dash of nutmeg for panache. The first thing that happened at my house was that I am allergic to walnuts. No problem, we substitute pecans. Then my sister develops an allergy to celery and dates. Okay, leave the celery out, substitute raisins for dates. Then my new brother in law arrives with an allergy to apples. So we substitute pears. It was then that I asked my mother the ultimate question, "At what point do we cease calling it Waldorf Salad?"
